CANDLENUT has to come first. It is one of the restaurants I think tells you something important about Singapore. Peranakan food is deeply rooted in the city’ s culture, and Malcolm Lee presents it with real confidence. It is refined, but it still feels generous. The buah keluak is the dish people talk about, and they are right to. It has that depth and intensity you remember afterwards. ODETTE is where I would take someone I wanted to impress, particularly if they were visiting Singapore for the first time. It is in the National Gallery, which already gives the evening a sense of place, and the food has precision without becoming stiff.
